Turkey Bacon Sandwich With Pesto Hummus

TURKEY BACON SANDWICH WITH PESTO HUMMUS

This recipe was inspired by my need to create a lunch with ingredients from my fridge, which didn’t really work out the way I planned. Inspiration hit, and suddenly I wanted pesto. I wanted bacon, I wanted hummus and all the good things in this sandwich. So, I rushed out the door with my stomach rumbling, off to the grocery store to buy what I needed.

Once I got to the store, I saw the freshly-baked Ciabatta bread, and knew that it exactly what this sandwich needed. The rest of the ingredients easily fell into place and I was able to make this delicious quick, and simple sandwich.

I love the different combination of textures and flavors. When shopping for a favorite bacon, I recommend buying organic, and without nitrates if you can. Flavors like smoked, peppered, maple, and Applewood-smoked bacon are amazing. The organic quality will also really add to the flavors, which make this recipe so good.

Also, if you want the recipe a bit healthier, purchase turkey that is uncured, and freshly sliced at the deli. I would recommend your local Whole Foods store, or something similar, that sell natural foods. Selecting meats and poultry that is free of growth hormones and antibiotics, unprocessed grains etc. really add to recipes.

You can make this sandwich for an everyday lunch, or even make some for a work meeting or pack a few for a picnic!
Ingredients
  • 2 pieces Ciabatta bread
  • A handful of fresh Arugula
  • 5 oz. fresh sliced turkey meat
  • 1 ripe avocado
  • 1/2 white onion, caramelized
  • 4 slices crispy bacon
  • 1 1/2 tablespoon basil pesto
  • 2 oz. homemade garlic hummus
Directions
  • Mix the basil pesto with your homemade garlic hummus and spread onto a piece of the Ciabatta bread.
  • Add sliced turkey, Arugula, crispy bacon, caramelized onion, and avocado.
  • Put it all together and enjoy!
Garlic Hummus Ingredients
  • 1 can rinsed, peeled chickpeas (garbanzo beans)
  • 1 clove fresh garlic
  • 1 1/2 extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon cumin
  • 1/8 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
Garlic Hummus Directions
  • Add chickpeas, garlic, olive oil, lemon juice, cumin, water, salt, and paprika to a food processor. Blend until smooth and creamy.
