
GRAIN FREE PEANUT BUTTER CHOCOLATE CHIP COOKIES
- 1/2 cup butter
- 1/4 cup coconut oil
- 1 1/4 cup raw sugar
- 1 teaspoon 100% pure vanilla extract
- 1 egg
- 1 1/4 cup almond meal
- 1/3 cup peanut butter
- 1/3 cup coconut flour
- 1/2 corn starch (can also use tapioca starch)
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup chocolate chips
- Preheat the oven to 350ºF.
- Add butter, coconut oil, coconut sugar, vanilla, egg, almond meal, and peanut butter into a bowl. Mix well with an electric mixer. Set aside.
- Put coconut flour, corn starch, baking soda, salt, in a separate bowl and mix together well.
- Add butter mixture to the coconut flour mixture and blend well until no lumps appear.
- Gently fold or stir in chocolate chips.
- Form small balls with dough and place on an oiled baking sheet.
- Bake for approximately 10 minutes until golden brown, or a toothpick comes out clean.
