
BANANA BREAD WITH CARROT
- Greased, 9 x 5-inch bread pan
- 2 medium-ripe bananas, mashed to about ¾ cups
- 1 1¼ cups all-purpose flour
- 1 egg
- 1 cup sugar
- ½ teaspoon baking powder
- 1 teaspoon baking soda
- ½ cup (1 stick) butter, room temperature
- ¼ cup sour cream
- ½ cup finely chopped carrots
- ½ cup finely chopped walnuts
- Preheat oven to 350°
- In separate bowl, mix butter, sugar, eggs, bananas and sour cream
- Mix sour cream mixture with electric hand-mixer
- Stir in nuts and carrots
- Spoon entire mixture in to greased pan
- Bake until a toothpick poked into the center of loaf comes out clean
- Bakes for about 60 minutes
- Allow to cool 15 minutes before serving
