These grain free cookies are very unique. Several ingredients may not seem to work well together, but somehow they do!
The cookies are melt-in-your-mouth delicious and the ultimate in peanut butter goodness. They would be perfect for a holiday party, or to give to a friend to bless and thank them!
When shopping for the ingredients for this recipe, I headed over to Trader Joe’s, mostly because I think that they have the best prices for specialty items like 100% raw sugar, coconut flour, almond meal, vanilla extract and unusual, healthy ingredients. Items that can be more expensive at regular grocery stores.
Trader Joe’s specializes in quick-prep, prepared, healthy, delicious, and reasonably priced items. I buy other bulk items, like coconut oil in a big jar, from Costco because of how much I use and how often I use it.
I think it’s worth the investment to buy in large quantities if you plan to cook or bake with a particular ingredient frequently. It ends up being a great deal for the price. For all the other ingredients in this recipe, you would be fine to buy at any general grocery store.

Ingredients
1/2 cup butter
1/4 cup coconut oil
1 1/4 cup raw sugar
1 teaspoon 100% pure vanilla extract
1 egg
1 1/4 cup almond meal
1/3 cup peanut butter
1/3 cup coconut flour
1/2 corn starch (can also use tapioca starch)
3/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup chocolate chips
Directions
Preheat the oven to 350ºF.
Add butter, coconut oil, coconut sugar, vanilla, egg, almond meal, and peanut butter into a bowl. Mix well with an electric mixer. Set aside.
Put coconut flour, corn starch, baking soda, salt, in a separate bowl and mix together well.
Add butter mixture to the coconut flour mixture and blend well until no lumps appear.
Gently fold or stir in chocolate chips.
Form small balls with dough and place on an oiled baking sheet.
Bake for approximately 10 minutes until golden brown, or a toothpick comes out clean.
